Every stored message and attachment is encrypted with AES / Fernet keys you hold. Plaintext is never written to disk — not even in quarantine.
The entire gateway runs on your own network. Nothing in the mail path depends on us being reachable. Enterprise AI can use a model you host, or a hosted provider you enable.
